One Pot Chicken and Sausage Alfredo

For a delicious weeknight dinner without a lengthy cleanup, make One-Pot Chicken and Sausage Alfredo.

Ingredients

  • 2 Tbsp. olive oil
  • 1/2 lb. chicken, cut into 1-inch pieces
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 lb. smoked sausage, sliced into 1-inch pieces
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 Tbsp. cream cheese
  • 1 1/4 cups heavy cream
  • 1/2 package penne pasta
  • 3/4 Tbsp. Cajun seasoning
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup minced fresh parsley

Instructions

  1. In a large pot over medium-high heat, add oil, chicken, salt and pepper. Cook about 3 minutes, add sausage and garlic and cook an additional two minutes.
  2. Stir in chicken broth, cream cheese, heavy cream, uncooked pasta and Cajun seasoning. Bring to simmer, then reduce heat to low. Cover and cook 15 to 20 minutes, until pasta is tender.
  3. Remove from heat and stir in Parmesan cheese. Top with parsley and serve.
