When you think of burgers, you usually think beef. In the Sparkle Eats Kitchen this week, we’re making burgers out of salmon and topping them with some fresh avocado salsa. This is a great light dinner that can be put together in about 20 minutes.

Ingredients
Salmon Burger
1lb.salmon filletskinned and chopped fine
1/2cuppanko crumbs
1egg
1/4cupchopped green onion
1/2green pepperseeded and chopped
1tbsp.finely chopped jalapeno pepper
1tbsp.lime juice
1/2tsp.salt
1/4tsp.pepper
Avocado Salsa
1large ripe avocadopeeled, seeded and chopped
1/2green pepperseeded and chopped
1tbsp.chopped jalapeno
1/4cupchopped green onion
1tbsp.lime juice
1/4tsp.salt
1/4tsp.freshly ground black pepper
Instructions
In a large bowl, mix chopped salmon, bread crumbs, green pepper, jalapeno, egg, green onion, lime juice, salt and pepper. Mix well. Heat indoor grill pan or outdoor grill to medium-high heat. Cook for about 4 minutes on each side until cooked through.
For the salsa, combine avocado, pepper, jalapeno, green onion, lime juice, salt and pepper, mashing the avocado, if desired. Top burgers with salsa. Serve with or without bun and top with tomato and red onion.
