2-3lbspork loin roast
1/2tspsalt
1/2tspfreshly ground black pepper
1canpineapple ringsjuices reserved
16ozbottle barbecue sauce
2tspDijon mustard
1tsphot sauce
1/2tsponion powder
1red bell pepperchopped
3clovesgarlicminced
1/4cupred onionchopped
Instructions
Preheat oven to 450°.
Place pork loin on a cutting board and make slices in the meat every inch, not cutting all the way through.
Transfer to a large baking dish and season pork with salt and pepper. Fill each slice with a pineapple ring.
In a medium bowl, stir together barbecue sauce, ½ cup reserved pineapple juice, mustard, hot sauce and onion powder. Add red pepper, garlic and red onion. Pour sauce over pork loin and bake 10-12 minutes. Lower heat to 350º and cook for another 45-60 minutes, depending on the size of the roast. An instant read thermometer should read 145º.
