Megan is giving you the perfect dinner recipe for pork loin. We're cutting slices in the roast and adding pineapple slices and barbecue sauce to make an easy and delicious dinner.

Ingredients

  • 2-3 lbs pork loin roast
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 can pineapple rings juices reserved
  • 16 oz bottle barbecue sauce
  • 2 tsp Dijon mustard
  • 1 tsp hot sauce
  • 1/2 tsp onion powder
  • 1 red bell pepper chopped
  • 3 cloves garlic minced
  • 1/4 cup red onion chopped

Instructions

  • Preheat oven to 450°.
  • Place pork loin on a cutting board and make slices in the meat every inch, not cutting all the way through.
  • Transfer to a large baking dish and season pork with salt and pepper. Fill each slice with a pineapple ring.
  • In a medium bowl, stir together barbecue sauce, ½ cup reserved pineapple juice, mustard, hot sauce and onion powder. Add red pepper, garlic and red onion. Pour sauce over pork loin and bake 10-12 minutes. Lower heat to 350º and cook for another 45-60 minutes, depending on the size of the roast. An instant read thermometer should read 145º.
