Ingredients

  • 1 head cauliflower broken into florets
  • 2 tsp salt
  • 3 eggs beaten
  • 1 cup seasoned bread crumbs
  • 1 cup seasoned Panko bread crumbs
  • cooking oil for frying

Instructions

  • In a large pot of boiling water, cook cauliflower until cooked through, but still firm.
  • In a shallow dish, combine bread crumbs and Panko bread crumbs and in a separate bowl, beat eggs. Season cauliflower with plenty of salt, dip into egg, then into bread crumbs.
  • Fry cauliflower in hot oil until nicely browned. Drain on paper towels and season with salt again, if desired.

Notes

*Message from Megan: Make sure you use plenty of salt on these. It may feel like you’re over salting them, but it takes a lot.
