The combination of the buttermilk and salt helps keep the turkey extra moist and gives it a nicely browned skin.

Ingredients

  • 1 (6-7 lb.) bone-in turkey breast
  • 3 cups buttermilk
  • 3 tbsp hot sauce
  • 2 tbsp salt
  • 1 tbsp dried basil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp freshly ground black pepper
  • 1 tsp cayenne pepper
  • 4 tbsp butter
  • salt and pepper for seasoning

Instructions

  • Combine buttermilk, salt, hot sauce, basil, garlic powder, onion powder, black pepper and cayenne in a large resealable plastic bag. Add turkey. Refrigerate for 8 to 12 hours.
  • Preheat oven to 350º. Discard marinade and pat turkey dry with paper towels. Set on a roasting rack set inside a roasting pan. Pour melted butter all over turkey and season generously with salt and pepper.
  • Roast in oven for about 1 1/2 hours or until internal temperature measures 165º. Let rest 20 minutes before slicing.
