Ingredients
1butternut squashpeeled, seeded and cubed
1lbSparkle sausage
3tbspolive oildivided
1tspsalt
1tspfreshly ground black pepper
4clovesgarlicminced
6ozspinach
1cupheavy whipping cream
1/2cupParmesan cheeseshredded
8ozfavorite pasta shape
Instructions
Preheat oven to 425º. Add butternut squash to a baking sheet. Coat with 1 tbsp olive oil, salt and pepper. Roast for 20 minutes and remove from oven. Meanwhile, cook pasta according to package directions until al dente.
While the butternut squash and pasta are cooking, in a large skillet, heat 1 tbsp olive oil on medium heat. Add sausage and brown until cooked through. Remove from pan into a bowl, set aside.
Add remaining olive oil, garlic and spinach to skillet and cook on medium heat for 5 minutes until spinach starts to wilt. Add heavy cream. Bring to a boil then immediately reduce to simmer. Add Parmesan cheese. Keep stirring until cheese is fully melted. Add sausage back in and warm through. Stir in the cooked pasta and roasted butternut squash until everything is coated in sauce and serve.
