Summer means it’s corn season! It’s much more available in July and we’re always looking for new ways to use it. This easy corn salad is a great side to almost any grilled meat dish and topped with corn chips… even better!

Ingredients
2 (15 oz.)canswhole kernel corndrained or 4 cups corn off the cob
1red pepperdiced
1/3cupfinely diced red onion
1 1/2cupshredded Cheddar cheese
2/3cupmayonnaise
1/3cupsour cream
1tbsp.taco seasoning
1tbsp.dry ranch dressing
1tbsp.lime juice
1/4tsp.freshly ground black pepper
1 (9.75 oz.)bagchili cheese flavored corn chips
chopped cilantrofor topping
Instructions
In a large mixing bowl, stir together corn, red pepper, red onion and shredded cheese.
In a small bowl, combine mayo, sour cream, taco seasoning, ranch seasoning, lime juice and black pepper and pour over salad.
Right before serving, stir in crushed corn chips and garnish with fresh cilantro if desired.
