Ingredients

  • 2 lbs redskin potatoes
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 3/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 cucumber diced
  • 1/2 cup sliced black olives
  • 1/2 cup chopped red or green peppers
  • 1/2 cup thinly sliced red onion
  • 5 or 6 pepperoncini peppers coarsely chopped
  • 1 cup crumbled Feta cheese

Instructions

  • Cook potatoes till tender, cool and cut into cubes.
  • In a small bowl or measuring cup, combine vinegar, oil, salt and pepper; whisk well and set aside.
  • In a large bowl, combine potatoes, cucumber, black olives, red onion, pepperoncini and Feta cheese. Pour dressing overtop and stir to combine. Refrigerate until cooled and ready to serve.
