Ingredients
2lbsredskin potatoes
1/3cupolive oil
3tbspred wine vinegar
3/4tspsalt
1/4tspfreshly ground black pepper
1cucumberdiced
1/2cupsliced black olives
1/2cupchopped red or green peppers
1/2cupthinly sliced red onion
5 or 6pepperoncini pepperscoarsely chopped
1cupcrumbled Feta cheese
Instructions
Cook potatoes till tender, cool and cut into cubes.
In a small bowl or measuring cup, combine vinegar, oil, salt and pepper; whisk well and set aside.
In a large bowl, combine potatoes, cucumber, black olives, red onion, pepperoncini and Feta cheese. Pour dressing overtop and stir to combine. Refrigerate until cooled and ready to serve.
