Smothered Pork Chops

Everyone loves a good casserole; you get an entire balanced meal in one dish! This week, we're giving you a different recipe using pork chops, rice and lots of cheesy goodness overtop that the kids are sure to love as well. And what's best of all is it's done in under thirty minutes, which is perfect for those busy week nights we all seem to have.

Ingredients

  • 4 boneless pork chops about 1-inch thick
  • 1/2 tsp seasoned salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp vegetable oil
  • 2 cups cooked rice
  • 10.75 oz can cream of celery soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup French fried onions

Instructions

  • Start by preheating your oven to 375ยบ. Sprinkle pork chops with seasoned salt, pepper and garlic powder. Heat oil in a skillet over medium-high heat. Add pork chops and cook for 2 to 3 minutes per side, until starting to brown.
  • Spread rice in the bottom of a 9 x 13-inch baking dish coated with nonstick cooking spray. Place pork chops overtop of the rice. In a bowl, mix together cream of celery soup, milk and sour cream. Pour over the pork chops. Bake uncovered for 25 minutes. Remove from oven and top pork chops with shredded cheeses and French fried onions and bake for an additional 5 minutes.
