Smothered Pork Chops

Everyone loves a good casserole; you get an entire balanced meal in one dish! This week, we’re giving you a different recipe using pork chops, rice and lots of cheesy goodness overtop that the kids are sure to love as well. And what’s best of all is it’s done in under thirty minutes, which is perfect for those busy week nights we all seem to have. Let’s get started!

To make this unique (and soon to be favorite) dish, you’ll need four boneless pork chops that are cut about 1-inch thick, half of a teaspoon of seasoned salt, half of a teaspoon of freshly ground black pepper, half of a teaspoon of garlic powder, one tablespoon of vegetable oil, two cups of cooked rice, one 10.75 ounce can of cream of celery soup, half of a cup of milk, half of a cup of sour cream, half of a cup of shredded mozzarella cheese, one cup of shredded cheddar cheese and one cup of French fried onions.

Start by preheating your oven to 375º. Sprinkle pork chops with seasoned salt, pepper and garlic powder. Heat oil in a skillet over medium-high heat. Add pork chops and cook for 2 to 3 minutes per side, until starting to brown.

Spread rice in the bottom of a 9 x 13-inch baking dish coated with nonstick cooking spray. Place pork chops overtop of the rice. In a bowl, mix together cream of celery soup, milk and sour cream. Pour over the pork chops. Bake uncovered for 25 minutes. Remove from oven and top pork chops with shredded cheeses and French fried onions and bake for an additional 5 minutes. Then serve immediately!
