Bacon and Pepper Jack Cheese Chicken
Serve this recipe with a tossed salad and potatoes for a complete meal!
Ingredients
- 4 to 6 slices bacon
- 4 boneless, skinless chicken breasts
- 1/2 tsp. seasoned salt
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. garlic powder
- 1/4 tsp. chili powder
- 4 Tbsp. all-purpose flour
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 4 Tbsp. barbecue sauce
- 4 to 6 slices pepper jack cheese
- 3 Tbsp. fresh cilantro
Directions
- Preheat oven to 375°.
- Grease baking dish and set aside. Fry bacon until almost crisp. Remove to paper towels to drain.
- In a shallow dish, combine seasoned salt, pepper, garlic powder, chili powder and flour.
- Dredge chicken in flour mixture to coat thoroughly.
- In a large skillet over medium heat melt butter, olive oil and garlic and sauté chicken until through, about 5 minutes on each side.
- Arrange chicken breasts in baking dish. Spread barbecue sauce over the chicken, top with two slices and slice of pepper jack cheese.
- Bake chicken for about5 to 6 minutes, until cheese is melted. Garnish with cilantro before serving.
