Pierogi and Cheese Casserole

Pierogi and Cheese Casserole

You can’t go wrong with pierogies and cheese. This recipe is simply delicious and has less than 10 ingredients!

Ingredients

  • 2 Tbsp. butter
  • 1 onion, sliced
  • 9 lasagna noodles, uncooked
  • 4 cups mashed potatoes
  • 4 oz. package herb and garlic cream cheese, softened
  • 1 cup bacon, cooked and crumbled, divided
  • 2 cups shredded Cheddar cheese, divided

Instructions

  1. Heat oven to 375º.
  2. Sauté onion in butter until caramelized. Cook noodles to package directions. Meanwhile, combine mashed potatoes, cream cheese, cooked onion, 1/2 cup bacon and 1 cup Cheddar cheese.
  3. Place 3 noodles in a 9 x 13-inch baking dish sprayed with cooking spray; cover with 1/3 potato mixture. Repeat layers twice. Top with remaining bacon and Cheddar cheese.
  4. Bake covered dish for 30 minutes or until heated through. Uncover; bake for 3 to 5 minutes or until cheese is lightly browned. Let cool for 10 minutes before serving.
