Baked Salmon and Asparagus

Baked Salmon and Asparagus

This recipe is done in less than 30 minutes! Baked salmon and asparagus is gluten free, low on calories and big on flavor.

Ingredients

  • 2 salmon fillets
  • 16 asparagus spears
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dry oregano
  • 2 slices onion
  • 4 slices lemon

Instructions

  1. Preheat oven to 400º.
  2. Cut two sheets of foil, big enough to wrap salmon and asparagus. Divide asparagus on foil sheets. Layer salmon fillets over asparagus. Drizzle olive oil over salmon and sprinkle with salt, pepper, garlic powder and oregano. Top with onion and lemon. Wrap foil over salmon to enclose. Place foil packets on a baking sheet and bake for about 20 minutes. Unwrap and transfer baked salmon and asparagus to serving plates.
