- 2 cups diced onion
- 2 cups chopped broccoli
- 3/4 lb. ham, diced
- 12 frozen pierogies
- 1 cup low-sodium chicken broth
- 1/4 cup heavy cream
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 cup shredded Cheddar cheese
Instructions
- Melt 2 tablespoons butter in a large skillet over medium-high heat. Add onions and broccoli and cook until onions are golden brown, about 10 minutes. Remove vegetables and place on a plate. Add ham and cook until lightly browned. Remove ham to the plate.
- In the same skillet, melt remaining butter and add pierogies. Cook for 3 to 5 minutes, until lightly browned. Add broth, then reduce heat to medium, cover and simmer for 15 minutes, until broth is mostly absorbed. Add ham and vegetables back into pan. Add cream, salt and pepper. Stir to combine. Top with cheese. Cover until cheese is melted and bubbly.
