Michael Alberini‘s Meatballs and Marinara

Ingredients
- 1.5 oz. garlic cloves
- 2 1/2 lbs. ground beef
- 1/2 bunch fresh parsley
- 3 eggs
- 1/2 cup milk
- 1 cup grated Parmesan cheese
- 1/2 cup grated Romano cheese
- 2 1/4 tsp. salt
- 2 1/4 tsp. freshly ground black pepper
- 1 1/2 cups bread crumbs
- Michael Alberini’s Marinara Sauce
Instructions
- Preheat oven to 350º.
- Blanch garlic by boiling cleaned cloves in water for 60 to 90 seconds. Remove from water and immediately cool in ice water; mince.
- For meatballs, combine ground beef, parsley, eggs, milk, cheeses, salt and pepper. Slowly mix half of the bread crumbs, add remaining in mixer as it combines.
- Form into 3 oz. balls and bake on a baking sheet sprayed with cooking spray for 15 to 20 minutes. Add Michael Alberini’s Marinara and serve over your favorite pasta.
