Chicken Bruschetta Pasta

No sauce is need in Chicken Bruschetta Pasta. Fresh tomatoes and basil are packed in this delightful dish.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1/4 cup plus 1 Tbsp. olive oil, divided
  • 1 Tbsp. plus 1/2 tsp. balsamic vinegar, divided
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 1/4 cup basil, finely chopped
  • 3/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (16 oz.) box linguine pasta
  • 3 Tbsp. heavy cream
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat grill or grill pan.
  2. Brush chicken with one tablespoon olive oil and 1 tablespoon balsamic vinegar, then season with salt and pepper. Grill chicken for 8 to 10 minutes per side, until chicken is cooked through.
  3. In a medium bowl, combine tomatoes, remaining 1/4 cup olive oil, 1/2 teaspoon balsamic vinegar, garlic, basil, salt and pepper.
  4. Cook linguine according to package directions. Drain pasta and add linguine back into pot, add bruschetta, heavy cream and cheese. Cook to combine. Remove chicken from grill, slice and serve over pasta.
