Garlic Roasted Potatoes
Garlic Roasted Potatoes are next on the menu. This side dish is an easy addition to any meal!
Ingredients
- 1 lb. baby potatoes, rinsed and cleaned
- 2 Tbsp. butter, melted
- 2 Tbsp. olive oil
- 4 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/2 tsp. freshly ground black pepper
- Chopped parsley for garnishing
Instructions
- Preheat the oven to 400º.
- Cut horizontal slits in potatoes. In a small bowl, combine butter, olive oil, garlic, salt, cayenne pepper and black pepper. Stir to combine. Toss potatoes with garlic mixture, making sure the garlic mixture gets inside the slits of the potatoes. Transfer potatoes to a roasting pan.
- Roast potatoes for 20 minutes, then turn them over and baste with garlic oil. Roast for 20 minutes more. Remove from heat and garnish with parsley.
