Cajun Chicken Alfredo

Cajun Chicken Alfredo

Cajun Chicken Alfredo is done in one pot for easy clean up!

Ingredients

  • 2 Tbsp. olive oil
  • 1 lb. boneless skinless chicken breast, cut into bite-sized chunks
  • 2 tsp. Cajun seasoning
  • 6 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 8 oz. fettuccini pasta, uncooked
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. salt
  • Parsley for garnish

Instructions

  1. Add oil to a large pot. Place over medium-high heat for two minutes. Add chicken and Cajun seasoning. Cook for 5 minutes, stirring occasionally. Add garlic and cook for 1 minute, stirring often.
  2. Add broth and milk. Add pasta. Cover and bring to a boil, stirring occasionally. Reduce heat to medium-low and let pasta simmer, covered for 8 to 13 minutes. Stir every 3 minutes to prevent sticking. Cook until there is about 1/2-inch liquid in bottom of the pot. Remove pot from heat, stir in cheese, salt, pepper and garnish with parsley.
