Sirloin Tip Roast

Ingredients
- 1 (5 to 8 lbs.) sirloin tip roast
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 cup water
- 1/2 cup red wine
- 6 cloves garlic, halved
- 1/4 cup Dijon mustard
- 1/4 cup au jus mix
- 1/4 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/4 tsp. dried basil
- 1/4 tsp. dried rosemary
- 1/4 tsp. tarragon
- Olive oil
Instructions
- Preheat oven to 350º.
- Set roast at room temperature for 1 hour prior to cooking. Thoroughly rinse roast and pat dry with paper towel. Season with salt and pepper.
- Cover bottom of a roasting pan with olive oil, set on medium-high heat for about 4 minutes until hot. Place roast into pan and sear sides until browned, about 6 to 8 minutes. Set a wire rack in another roasting pan and set roast onto rack. Pour water over roast, making sure that it covers the bottom of the pan. Add wine. Cut small slits in the roast and insert garlic. Brush roast with mustard. Sprinkle with au jus mix, onion powder, garlic powder, basil, rosemary and tarragon.
- Bake roast for 2 1/2 to 3 hours or until desired doneness. After removing from oven, tent with aluminum foil. Allow to stand for 20 to 30 minutes before carving. Serve juices from pan as gravy.
