Fireworks Sugar Cookie Cake

Happy 4th of July! Fireworks Sugar Cookie Cake is a must have for the holiday. The kids can help make this delicious dessert!

Ingredients

  • 2 sticks butter, softened, divided
  • 3/4 cup sugar
  • 1 egg
  • 1 Tbsp. plus 1 tsp. vanilla extract, divided
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cream of tartar
  • 2 cups flour
  • 1 cup patriotic M&Ms, divided
  • 1/2 cup red and white sprinkles
  • 1 1/2 cups powdered sugar
  • 1/8 tsp. salt
  • 2 Tbsp. heavy whipping cream
  • Red or blue food coloring, optional

Instructions

  1. Preheat oven to 350º.
  2. Beat 1 1/2 sticks butter and sugar with a hand or stand mixer until creamy. Beat in egg and 1 tablespoon vanilla, then mix in baking soda, salt and cream of tartar. Slowly mix in flour. Stir in 3/4 cup M&Ms and sprinkles.
  3. Press batter into a 9” round cake pan lined with foil and sprayed with nonstick cooking spray. Press 1/4 cup M&Ms onto top. Bake for 19 to 22 minutes or until the edges are golden brown.
  4. Beat remaining 1/2 stick butter until smooth, then slowly beat in powdered sugar until crumbly. Add salt, 1 teaspoon vanilla, heavy whipping cream and food coloring. Beat until smooth. Use a piping bag to decorate edge of cake with frosting. Top with more sprinkles and M&Ms. Store covered for up to 2 days.
