Apple Cider Donuts
For dessert, make Apple Cider Donuts- a fall favorite sure to please adults and kids alike.
Ingredients
- 2 cups apple cider
- 3 cups all-purpose flour
- 1/2 cup whole wheat flour
- 2/3 cup brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/4 tsp. cardamom
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- 2 eggs
- 1 tsp. vanilla
- 6 Tbsp. butter, melted and cooled
- Oil, for frying
Instructions
- In a small saucepan, bring cider to a rapid boil. Cook over high heat until reduced in half,
- about 12 minutes. Set aside and let cool.
- In a large bowl, mix flours, brown sugar, baking powder, salt, baking soda, cardamom, nutmeg, cinnamon and allspice.
- In a separate bowl, whisk eggs, vanilla, melted butter and cooled cider. Gradually add wet ingredients to the dry mixture until moistened. Cover and refrigerate for about an hour.
- In an electric skillet or deep fryer, heat oil to 325°. Divide dough in half. Flatten each portion to
- ½-inch thickness and cut with a 3-inch donut cutter. Fry donuts 2 to 3 minutes per side.
