Mac ‘n Cheese Bites
Crisp on the outside and gooey on the inside, these Mac ‘n Cheese Bites are the perfect finger food for guests of all ages.
Ingredients
- 1/2 lb. elbow macaroni
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 cups milk
- 2 cups shredded Cheddar cheese, divided
- 2 oz. cream cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. ground mustard
- 1 tsp. hot sauce
- 1 egg, beaten
Instructions
- Preheat oven to 400°.
- Cook pasta according to package directions and set aside.
- In a medium pan over medium heat, whisk butter and flour until smooth. Slowly add milk and bring to simmer. Add 1 1/2 cups Cheddar, cream cheese, salt, pepper, ground mustard and hot sauce. Stir until creamy. Remove from heat.
- In a large bowl, add pasta, cheese mixture and egg. Stir until pasta is evenly coated.
- Spoon mac and cheese mixture into mini muffin tins sprayed with cooking spray. Top evenly with remaining Cheddar and bake for 15 minutes.
