Mac 'N Cheese Bites

Crisp on the outside and gooey on the inside, these Mac ‘n Cheese Bites are the perfect finger food for guests of all ages.

Ingredients

  • 1/2 lb. elbow macaroni
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 1/2 cups milk
  • 2 cups shredded Cheddar cheese, divided
  • 2 oz. cream cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. ground mustard
  • 1 tsp. hot sauce
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400°.
  2. Cook pasta according to package directions and set aside.
  3. In a medium pan over medium heat, whisk butter and flour until smooth. Slowly add milk and bring to simmer. Add 1 1/2 cups Cheddar, cream cheese, salt, pepper, ground mustard and hot sauce. Stir until creamy. Remove from heat.
  4. In a large bowl, add pasta, cheese mixture and egg. Stir until pasta is evenly coated.
  5. Spoon mac and cheese mixture into mini muffin tins sprayed with cooking spray. Top evenly with remaining Cheddar and bake for 15 minutes.
