Pork with Blue Cheese Sauce
For dinner, treat your family to Pork with Blue Cheese Sauce. Serve with potatoes or a side salad to make it a meal!
Ingredients
- 1 (2 lb.) pork tenderloin, cut into 8, 2-inch medallions
- 3/4 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 2 Tbsp. olive oil
- 1 Tbsp. butter
- 2 shallots, chopped
- 1/4 cup white wine
- 1/2 cup crumbled blue cheese
- 3/4 cup heavy cream
- 1 tsp. chopped fresh parsley
Instructions
- Season pork with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a large pan over high heat. Add pork and sear until brown, about 3 minutes per side. Transfer to a plate.
- Add butter to the pan and melt over medium heat. Add shallots and cook for about 30 seconds. Add white wine and use a wooden spoon to scrape the bottom of the pan. Stir in blue cheese and cream. Let simmer until thick, about 3 minutes.
- Return the pork to the pan and cook, flipping once, for about 4 minutes. Season with remaining salt and pepper, garnish with parsley and serve.
