Watermelon Cupcakes

In charge of dessert for the next summer picnic? Impress your friends and family with Watermelon Cupcakes. Light green cake, pink frosting and mini chocolate chips mimic the juicy fruit perfectly.

Ingredients

Cupcakes

  • 1 (15.25 oz.) box vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • Light green food coloring

Frosting

  • 2 sticks butter, softened
  • 3 cups powdered sugar
  • 1/2 tsp. powdered watermelon Kool-Aid mix
  • Red food coloring
  • Mini chocolate chips

Instructions

  1. Preheat oven to 350° for glass plans or 325° for dark or coated pans.
  2. Cupcakes
    In a large bowl, blend cake mix, water, oil and eggs at low speed until moistened, about 30 seconds. Beat at medium speed for 2 minutes, until smooth. Stir in a few drops of green food coloring.
  3. Divide batter evenly among a 12-cupcake tin, lined with cupcake liners. Bake for 15-20 minutes. Remove from oven and let cool completely.
  4. Frosting
    In a large bowl, beat butter until smooth. With a spatula, slowly stir in powdered sugar, then beat until smooth. Mix in Kool-Aid powder and 1 to 2 drops of red food coloring. Pipe frosting onto cupcakes and top with chocolate chips.
