Make-Ahead Breakfast Sandwiches
Pressed for time in the mornings? Prep Make-Ahead Breakfast Sandwiches (complete with egg, ham and cheese) for the kids to re-heat before school!
Ingredients
- 6 eggs
- 1/2 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 6 English muffins, split in half
- 12 slices ham or Canadian bacon, divided
- 6 slices Cheddar or American cheese, divided
Instructions
- Preheat oven to 375°.
- Crack eggs into a muffin tin sprayed with nonstick cooking spray. Beat each egg slightly and season with salt and pepper. Cook about 12 to 14 minutes.
- Place one egg onto each muffin bottom. Top each with 2 slices ham and 1 slice cheese. Top with other muffin half. Wrap each sandwich tightly with plastic wrap and place in freezer.
- To reheat, remove plastic wrap from sandwich and wrap in a paper towel. Heat in microwave for 1 to 2 minutes, until heated through completely.
