Bacon and Pepper Jack Cheese Chicken

Serve this recipe with a tossed salad and potatoes for a complete meal!

Ingredients

  • 4 to 6 slices bacon
  • 4 boneless, skinless chicken breasts
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. garlic powder
  • 1/4 tsp. chili powder
  • 4 Tbsp. all-purpose flour
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 4 Tbsp. barbecue sauce
  • 4 to 6 slices pepper jack cheese
  • 3 Tbsp. fresh cilantro

Directions

  1. Preheat oven to 375°.
  2. Grease baking dish and set aside. Fry bacon until almost crisp. Remove to paper towels to drain.
  3. In a shallow dish, combine seasoned salt, pepper, garlic powder, chili powder and flour.
  4. Dredge chicken in flour mixture to coat thoroughly.
  5. In a large skillet over medium heat melt butter, olive oil and garlic and sauté chicken until through, about 5 minutes on each side.
  6. Arrange chicken breasts in baking dish. Spread barbecue sauce over the chicken, top with two slices and slice of pepper jack cheese.
  7. Bake chicken for about5 to 6 minutes, until cheese is melted. Garnish with cilantro before serving.
