Chile Edamame

Chile Edamame

These green vegetables are a tasty, unique substitute for corn or beans.

What you’ll need

  • 3 cups water
  • 1/4 tsp. salt
  • 1/2 lb. frozen edamame, in the pod
  • 2 Tbsp. Sriracha chili sauce
  • 2 tsp. sesame oil, divided
  • 1 tsp. low-sodium soy sauce
  • 1 tsp. oyster sauce
  • 1 Tbsp. minced ginger
  • 2 cloves garlic, minced

Directions

  1. Bring water and salt to a boil. Turn off the stove. Add frozen edamame, cover with lid for 3 to 5 minutes Drain and set aside.
  2. Combine Sriracha, one teaspoon of sesame oil, soy sauce and oyster sauce in a small bowl. Heat remaining sesame oil, ginger and garlic for a few seconds until fragrant. Add chili sauce; let it bubble briefly until slightly thickened. Turn off heat and add cooked edamame, stirring to coat them evenly in the chili sauce. Serve warm or chilled.
