Vegetarian Quesadillas

This healthy recipe can also be topped with avocado and tomatoes!

Ingredients

  • 1 (15.5 oz.) can black beans, drained and rinsed
  • 1 (14 oz.) can corn, drained
  • 1/2 cup chopped green onions
  • 1 Tbsp. lime juice
  • 3/4 cup salsa, drained
  • 1/4 tsp. salt
  • 3 Tbsp. chopped cilantro
  • 1 (8 count) package flour tortillas
  • 1 1/2 cups shredded Monterey Jack cheese
  • sour cream, shredded lettuce and guacamole for serving

Directions

  1. Preheat oven to 400°.
  2. In a medium bowl, combine beans, corn, green onions, lime juice, salsa, salt and cilantro. Place 4 tortillas on a baking sheet lined with parchment paper. Sprinkle the tortillas with half of the cheese. Using a slotted spoon, top tortillas with the bean mixture. Sprinkle with the remaining cheese and top with the remaining tortillas.
  3. Bake the quesadillas for 5 to 7 minutes or until the cheese has melted. Transfer to a cutting board.
  4. Cut each quesadilla into wedges and serve with guacamole, shredded lettuce and sour cream.
