Gia Russa Ragu Over Pasta

A special Gia Russa recipe today, this comfort food is delicious!

Ingredients

  • 2 Tbsp. vegetable oil
  • 3 to 4 lbs. short ribs, chuck roast or English cut roast
  • salt and freshly ground black pepper to taste
  • 2 jars Gia Russa Red Wine Braising Sauce
  • 1 Cup Gia Russa Beef Stock
  • 1 package Gia Russa Egg Nest
  • Pappardelle, cooked according to package directions
  • Gia Russa Romano Cheese and chopped parsley for garnish

Directions

  1. Heat oven to 325º.
  2. Place a Dutch oven over medium heat. Add oil, and heat until it is almost smoking. Season meat to taste with salt and pepper. Working in small batches, add meat to the hot oil and brown on both sides. Return meat to pot and add braising sauce and beef stock. Cover with lid and place in oven. Let cook approximately 3 hours or until meat is tender.
  3. Remove the cooked ribs from the pot and simmer sauce over medium heat to thicken. When meat is cool enough to handle, shred and return to sauce. Return shredded meat to casserole, and simmer to reduce sauce. Serve meat and sauce with cooked pasta. Garnish with Romano cheese and parsley, serve immediately.
