Herb Chicken with Zucchini Orzo

Only have 30 minutes to cook dinner? This Herb Chicken with Zucchini Orzo is a healthy, light meal for the whole family.

Ingredients

  • 1 cup dried orzo
  • 1 lb. skinless, boneless chicken breasts
  • 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 3 Tbsp. olive oil, divided
  • 2 zucchini, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp. red wine vinegar
  • 1/2 Tbsp. fresh dill
  • Lemon wedges

Instructions

  1. Prepare orzo according to package directions. Cover and keep warm. Meanwhile, sprinkle chicken with basil, salt and pepper.
  2. In large skillet heat 1 tablespoon of olive oil. Add chicken and cook for 12 minutes or until no longer pink. Remove from skillet. Add zucchini to skillet; cook for 3 minutes. Add garlic and cook one minute more. In a large bowl whisk together vinegar, remaining 2 tablespoons olive oil and dill. Add orzo and zucchini. Season with salt and pepper. Serve chicken over zucchini orzo mixture. Serve with lemon wedges.
