Beet Hummus

Beet Hummus

Ingredients

  • 4 medium beets
  • 3 cups water
  • 2 Tbsp. tahini
  • 4 Tbsp. freshly squeezed lemon juice
  • 1 Tbsp. lemon zest
  • 2 cloves garlic, minced
  • 1 Tbsp. ground cumin
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • Cucumber slices or pita chips for serving

Instructions

  1. Cut off the tops of the beets and scrub the roots clean. Place in a saucepan covered with water and simmer until tender, about 30 minutes. Peel beets once they have cooled.
  2. Place beets, tahini, lemon juice, lemon zest, garlic, cumin, salt and pepper in a food processor and pulse until smooth. Serve with cucumber slices or pita chips.
