Green Bean Potato Casserole & Caramel Apple Dip

Megan’s got two recipes for you this week to make your Thanksgiving prep extra easy. She’s starting with caramel apple dip that goes together in 5 minutes and can be made ahead of time to save you a little time on Thanksgiving. It can be served as an appetizer or a dessert. Next up is a side dish that combines two classic and favorite side dishes. Green Bean Potato Casserole is easy to put together and is topped with a crunchy bread crumb topping. This dish is sure to impress guests!

For Green Bean Casserole start with one chopped onion, three potatoes, peeled, cooked and mashed, 10.5oz of green beans, cooked, two eggs, 1/3 cup of grated Parmesan cheese, 1/2 tsp. of Italian seasoning, 1/2 tsp. of salt, 1/2 tsp. of freshly ground black pepper, 1/4 cup of breadcrumbs and 2 tbsp. of butter, cubed.

Preheat oven to 350°. In a medium pan over medium heat, cook onion until soft. Transfer to a large bowl. Add mashed potatoes and green beans. In a small bowl, combine eggs, cheese, Italian seasoning, salt and pepper. Pour overtop bean mixture and toss to combine. Transfer to a baking dish sprayed with non-stick cooking spray. Top evenly with bread crumbs and butter. Bake about 20 to 25 minutes.


For Caramel Apple Dip, start with 1 (8 oz.) softened package of cream cheese, 1/2 cup of powdered sugar, 1 tbsp. of milk, 1/2 tsp. of vanilla, 1/3 cup of caramel sauce, 1/4 cup crushed toffee bars, 2 tbsp. of crushed peanuts and three or four tart apples, sliced and/or graham crackers for dipping.

Using an electric hand mixer, beat cream cheese with an electric mixer until smooth. Add powdered sugar, milk and vanilla and beat until fully combined. Spread cream cheese mixture into a shallow dish or bowl. Add caramel sauce and top with crushed toffee bars and peanuts. Cover and refrigerate until ready to serve. Serve with slice apples and/or graham crackers.
