Lucky Lime Squares

Bring this dessert to your St. Patty’s Day party! The kids will love the bright green color.

Ingredients

  • 1 1/4 cups flour, divided
  • 1/4 cup powdered sugar
  • 1/4 tsp. salt
  • 1 stick butter, cut into pieces
  • 1 1/4 cup sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 2 tsp. lime zest
  • 2/3 cup fresh lime juice
  • Green food coloring

Instructions

  1. Preheat oven to 350º.
  2. Combine 1 cup of flour, powered sugar and salt in a large bowl. Add butter and work with your fingers until the mixture resembles cornmeal. Press into a greased 9-inch pan and bake for 20 to 25 minutes or until golden.
  3. In a medium bowl, whisk together sugar and remaining flour. Add eggs, one at a time, whisking well after each addition. Add vanilla, lime zest, lime juice and enough green food coloring to produce desired green color. Mix until smooth and combined.
  4. Pour filling over hot crust and return to oven to bake for another 20 minutes. When done, the filling will no longer jiggle. Let cool completely in the pan before slicing. Sprinkle powdered sugar overtop and serve.
