Veggie & Cheese Dip

Love vegetables? Try this veggie and cheese dip! It’s full of flavor and healthy ingredients.

Ingredients

  • 1 eggplant, peeled and chopped
  • 1 cup chopped onion
  • 1 cup chopped red pepper
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomato vinaigrette dressing
  • 1 zucchini, chopped
  • 1 tomato, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
  • Multigrain crackers

Instructions

  1. In a large skillet, cook eggplant, onion, red pepper and garlic in dressing on medium heat for 8 minutes.
  2. Add zucchini and tomatoes. Cover and simmer for 5 to 7 minutes or until tender. Stir in Parmesan cheese.
  3. Spoon into a serving bowl. Sprinkle with Mozzarella cheese and serve with crackers.
