Veggie & Cheese Dip
Love vegetables? Try this veggie and cheese dip! It’s full of flavor and healthy ingredients.
Ingredients
- 1 eggplant, peeled and chopped
- 1 cup chopped onion
- 1 cup chopped red pepper
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomato vinaigrette dressing
- 1 zucchini, chopped
- 1 tomato, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded Mozzarella cheese
- Multigrain crackers
Instructions
- In a large skillet, cook eggplant, onion, red pepper and garlic in dressing on medium heat for 8 minutes.
- Add zucchini and tomatoes. Cover and simmer for 5 to 7 minutes or until tender. Stir in Parmesan cheese.
- Spoon into a serving bowl. Sprinkle with Mozzarella cheese and serve with crackers.
