One Pot Penne with Sausage

Busy nights and not enough time? Try this penne recipe; it’s made in just 15 minutes and in one pot!

Ingredients

  • 1 lb. kielbasa, cut into bite sized pieces
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups sliced mushrooms
  • 3 cups penne pasta, uncooked
  • 2 cups chicken broth
  • 1 (10 oz.) jar chopped roasted red peppers, undrained
  • 2 cups Monterey Jack cheese
  • 1/2 cup Parmesan cheese
  • 2 cups spinach

Instructions

  1. Over medium heat add sausage, onion, garlic and mushrooms to a medium pot. Cook until onions are slightly tender, stirring often.
  2. Add pasta, chicken stock and roasted red peppers. Stir to combine. Cover for about 5 to 8 minutes. Remove lid, add cheese and spinach, stir and continue to cook until penne pasta is al dente. Remove from heat and serve.
