Gia Russa Grilled Sausage Ratatouille Pasta

Mollie from Gia Russa is in the kitchen this week making Grilled Sausage Ratatouille Pasta.

Ingredients

  • 1/2 lb. Gia Russa Fusilli Tri Color
  • 1 lb. sweet Italian sausage
  • 1 zucchini, cut lengthwise into thick slices
  • 1 bell pepper, halved, stemmed and seeded
  • 1 eggplant, sliced
  • 4 tomatoes, sliced
  • 1/4 cup Gia Russa mild olive oil
  • 3 to 4 Tbsp. Gia Russa white balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Gia Russa Romano cheese to taste
  • Gia Russa Balsamic Glaze for serving

Instructions

  1. In a medium pot of boiling salted water, cook pasta according to package directions. Reserve 1 cup pasta water, drain and return to pot.
  2. Heat grill to medium-high and lightly oil. Grill sausage until done. Let cool slightly and cut sausage. Brush vegetables with olive oil and season with salt and pepper. Place on grill, turning occasionally, until browned and tender. Transfer vegetables to a cutting board and let cool slightly. Roughly chop vegetables and add to pasta.
  3. Drizzle with olive oil and vinegar to taste. If necessary, add pasta water. Season with salt and pepper, sprinkle with parsley and cheese, and serve. Drizzle with Gia Russa Balsamic Glaze.
