Savory Tomato Tilapia
Enjoy this tomato tilapia; it’s quick and pairs nicely with a light-bodied white wine.
Ingredients
- 4 tilapia fillets
- 1/4 tsp. seasoned salt
- 1 Tbsp. lemon juice
- 2 Tbsp. olive oil
- 1 red onion, chopped
- 1 (10 oz.) can diced tomatoes and green chilies, undrained
- 3/4 cup chopped roasted red peppers
- 1/2 cup vegetable broth
- 1/4 cup tomato paste
- 3 cloves garlic, minced
- 1 tsp. dried oregano
Instructions
- Sprinkle fillets with salt and drizzle with lemon juice.
- In a large skillet heat oil over medium-high heat. Sauté onion until translucent. Add tomatoes, peppers, vegetable broth, tomato paste, garlic and oregano. Cook and stir for 2 to 3 minutes.
- Over tomato mixture, cook fillets covered for 6 to 8 minutes or until fish flakes easily with a fork.
