Savory Tomato Tilapia

Enjoy this tomato tilapia; it’s quick and pairs nicely with a light-bodied white wine.

Ingredients

  • 4 tilapia fillets
  • 1/4 tsp. seasoned salt
  • 1 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1 red onion, chopped
  • 1 (10 oz.) can diced tomatoes and green chilies, undrained
  • 3/4 cup chopped roasted red peppers
  • 1/2 cup vegetable broth
  • 1/4 cup tomato paste
  • 3 cloves garlic, minced
  • 1 tsp. dried oregano

Instructions

  1. Sprinkle fillets with salt and drizzle with lemon juice.
  2. In a large skillet heat oil over medium-high heat. Sauté onion until translucent. Add tomatoes, peppers, vegetable broth, tomato paste, garlic and oregano. Cook and stir for 2 to 3 minutes.
  3. Over tomato mixture, cook fillets covered for 6 to 8 minutes or until fish flakes easily with a fork.
