Broccoli and Cheese Dip

Broccoli and Cheese Dip

If you’re a fan of broccoli cheddar soup, then you’ll love this recipe for Broccoli and Cheese Dip– best served with French bread or warm tortillas.

Ingredients

  • 3 Tbsp. olive oil
  • 1 1/2 lbs. broccoli, heads cut into 1-inch florets
  • 1 clove garlic, minced
  • 1 tsp. ground coriander
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1/4 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 cup cream
  • 1/2 cup shredded provolone cheese
  • 2 cups shredded Mozzarella cheese
  • French bread or warm tortillas for serving

Instructions

  1. Preheat broiler.
  2. In a large skillet, heat olive oil. Add broccoli. Cook for 5 minutes over medium-low heat, stirring occasionally, until broccoli is browned. Add garlic and cook for 1 minute. Stir in coriander, chili powder, cumin and oregano. Season with salt and cook for 1 minute. Add cream and cook for about 3 minutes, until broccoli is tender and heated through. Add half the cheeses and stir.
  3. Transfer mixture to a prepared baking dish and top with remaining cheese. Broil for 5 to 6 minutes or until cheese is melted and browned. Serve with bread or tortillas.
