Maple Ginger Pork Tenderloin

Ingredients
- 1/4 cup maple syrup
- 1/4 cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1/2 tsp. freshly ground black pepper
- 4 tsp. ground ginger
- 1 lb. pork tenderloin
Instructions
- In a food processor, purée maple syrup, soy sauce, garlic, pepper and ginger until smooth. Transfer marinade to a resealable plastic bag. Add pork. Marinate in refrigerator for at least an hour, preferably overnight.
- Preheat oven to 500º.
- Remove pork from marinade and set on a foil-lined baking sheet. Roast in oven for 20 minutes, until pork is browned on top. Allow to rest on cutting board for 10 minutes. Meanwhile, transfer remaining marinade to a small saucepan. Cook on medium heat until reduced by half. Slice pork, drizzle with sauce and serve immediately.
