Broccoli Cheddar Mac and Cheese

Broccoli Cheddar Mac and Cheese

Make something for dinner that the kids will love: Broccoli Cheddar Mac and Cheese. Trust us, there’s enough cheese that they won’t even taste the veggies!

Ingredients
  • 2 cups elbow macaroni
  • 1 broccoli head or 16 oz. package frozen broccoli, cut into florets
  • 3 cups milk
  • 4 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 1/2 tsp. dry mustard
  • 1/4 tsp. paprika
  • 1/4 tsp. ground nutmeg
  • 1 tsp. ground white pepper
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 2 cups shredded sharp Cheddar cheese, divided
  • 1/2 cup shredded Parmesan cheese
Instructions
  1. Preheat broiler to 500º
  2. Cook pasta according to package directions and set aside. Steam broccoli until tender. Heat milk on the stovetop.
  3. Melt butter in a pot on medium-high heat. Sprinkle flour in pot and whisk to combine. Lower heat to medium and cook for 1 to 2 minutes. Pour in hot milk and whisk to combine. Lower heat to medium-low, whisking frequently, until sauce is smooth and thick. Stir in mustard, paprika, nutmeg, pepper, Worcestershire sauce and salt.
  4. Whisk in 1 1/2 cups Cheddar cheese and Parmesan cheese. Stir until cheese is melted and sauce is smooth. Stir in broccoli and pasta until well combined. Transfer to a baking dish. Sprinkle remaining cheese overtop and place under broiler for 5 to 7 minutes, until bubbly and lightly browned.
