Thai Cucumber Salad

This next recipe is done in less than five minutes! Thai Cucumber Salad is a light, refreshing snack or side dish perfect for these hot summer days.

Ingredients

  • 1/3 cup rice vinegar
  • 1 1/2 Tbsp. sugar
  • 1/2 tsp. toasted sesame oil
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 2 cucumbers, peeled and sliced
  • 1/4 cup chopped peanuts
  • 1/3 cup chopped green onions

Instructions

  1. In a small bowl, combine rice vinegar, sugar, sesame oil, red pepper flakes and salt. Set aside.
  2. Place cucumbers in a large bowl. Add dressing, peanuts and green onions, stir to combine. Serve immediately or refrigerate until ready to eat.
