Thai Cucumber Salad
This next recipe is done in less than five minutes! Thai Cucumber Salad is a light, refreshing snack or side dish perfect for these hot summer days.
Ingredients
- 1/3 cup rice vinegar
- 1 1/2 Tbsp. sugar
- 1/2 tsp. toasted sesame oil
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 2 cucumbers, peeled and sliced
- 1/4 cup chopped peanuts
- 1/3 cup chopped green onions
Instructions
- In a small bowl, combine rice vinegar, sugar, sesame oil, red pepper flakes and salt. Set aside.
- Place cucumbers in a large bowl. Add dressing, peanuts and green onions, stir to combine. Serve immediately or refrigerate until ready to eat.
