White Chocolate Cranberry Oatmeal Cookie

We have a twist to the oatmeal cookie; we are adding white chocolate, cranberries and pecans!

Ingredients

  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 3/4 cups old-fashioned rolled oats
  • 3/4 cup dried cranberries
  • 3/4 cup white chocolate chips
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°.
  2. In a large bowl, mix together flour, baking soda, cinnamon and salt. Set aside.
  3. In a large mixing bowl, mix butter and sugars until smooth. Mix in egg and then vanilla. Slowly add the flour mixture to the wet ingredients and mix until combined. Add oats, cranberries, white chocolate chips and pecans and mix until fully combined. Cover dough and refrigerate for at least 30 minutes.
  4. Line two large baking sheets with parchment paper and set aside. Scoop out tablespoon sized pieces of dough and drop them onto the prepared baking sheets. Bake cookies for 10 to 12 minutes. Remove from the oven and allow to cool on the baking sheet for 10 minutes, then transfer to a wire rack to finish cooling.
