Cranberry Salad with Balsamic Fig Dressing

Cranberry Salad with Balsamic Fig Dressing is an elegant, light and colorful meal for the whole family.

Ingredients

  • 2 cups walnuts
  • 1/3 cup maple syrup
  • 1/4 tsp. cinnamon
  • 1/8 tsp. ground cloves
  • 1/2 tsp. salt
  • 4 cups mixed greens
  • 2 cups arugula
  • Arils from one pomegranate
  • 1 cup dried cranberries
  • 8 oz. crumbled goat or feta cheese
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 Tbsp. fig preserves

Instructions

  1. Preheat oven to 375º.
  2. Place walnuts on a baking sheet lined with parchment paper. Toss walnuts with maple syrup, cinnamon, ground cloves and salt. Bake for 15 to 25 minutes, stirring throughout; cool.
  3. Add greens to a large salad bowl. Add pomegranate arils and cranberries. Add walnuts and cheese and gently toss.
  4. Whisk olive oil, balsamic vinegar and fig preserves until combined. Season with salt and pepper. Just before serving, drizzle dressing over salad and gently toss.
