Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 egg
  • 1/2 cup pumpkin puree
  • 1 cup almond milk
  • 1/2 cup brown sugar
  • 2 Tbsp. grape seed or canola oil
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 3/4 cup whole wheat flour
  • 3/4 cup flour
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375º.
  2. Add egg, pumpkin puree, almond milk, brown sugar, oil and vanilla extract and stir. Then add salt, baking soda, baking powder, cinnamon, nutmeg and ground cloves and whisk. Carefully sift flour over wet ingredients and stir. Add chocolate chips and stir until just incorporated. If batter appears too thick, add almond milk.
  3. Spoon 3/4 batter in each paper-lined muffin tin. Sprinkle chocolate chips on top. Bake for 22 to 28 minutes or until golden brown and a toothpick inserted into the center comes out clean. Let rest for 5 minutes, then transfer to a wire rack to cool completely.
