Meatball Sub with Peppers

Meatball Sub with Peppers is an easy dinner or lunch idea for the whole family.

Ingredients

  • 1 Tbsp. olive oil
  • 1 onion, sliced
  • 1/2 green pepper, sliced
  • 1 red pepper, sliced
  • 1/4 tsp. salt
  • 1 (12 oz.) loaf Italian bread
  • 12 turkey or beef meatballs, cooked
  • 1 1/2 cup marinara sauce
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Preheat broiler.
  2. Heat oil in a large skillet over medium heat. Add onions, peppers and salt and sauté for 15 minutes. Cut bread into quarters crosswise and cut each quarter in half, being careful not to cut all the way through. Scoop soft center out of bread.

  4. meatballs on each quarter of bread. Top with sauce and pepper mixture. Sprinkle with cheese. Broil for about 4 minutes, until cheese is melted.
