Lemon Rosemary Roasted Chicken

Lemon Rosemary Roasted Chicken is super easy to make. Start the slow cooker in the morning and dinner will be ready when you return after work. Serve with red skinned potatoes and your favorite veggie.

Ingredients

  • 1 whole chicken
  • 3/4 cup pitted green olives, roughly chopped
  • 4 cloves garlic, peeled
  • 5 fresh rosemary sprigs
  • 1 Tbsp. olive oil
  • 3 Tbsp. honey
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 4 lemon slices

Instructions

  1. Rinse chicken with water and pat dry. Place in the slow cooker and stuff chicken with olives and garlic cloves.
  2. Place rosemary sprigs on and under chicken. Drizzle chicken with olive oil and honey. Season with salt and pepper. Arrange lemon slices over chicken.
  3. Cook on low for 6 to 8 hours, depending on the size of the chicken.
