Tater Tot Casserole

Gia Russa is whipping up something different this week. Try Cioppino, this fish stew is a lighter alternative to heavy holiday meals!

Ingredients

  • 5 Tbsp. Gia Russa Extra Virgin Olive
  • Oil, divided
  • 3 oz. sea bass, cubed
  • 2 oz. baby shrimp
  • 4 oz. mussels
  • 4 oz. clams
  • 2 oz. clam meat
  • 2 oz. lobster meat
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 jar Mario Batali Cioppino
  • 1/2 cup vegetable stock, optional
  • 3 Tbsp. freshly chopped Italian parsley
  • 1 baguette loaf, sliced

Instructions

  1. Drizzle 2 tablespoons olive oil in a large pot, heat until hot. Add sea bass and cook for 2 minutes, add shrimp, mussels, clams, clam meat and lobster meat. Toss for about 2 to 3 minutes. Season with salt and pepper. Add Cioppino and vegetable stock. Bring to boil, then lower heat and simmer for 20 minutes.
  2. Before serving, drizzle with remaining oil and garnish with parsley. Serve with baguettes.
