Mushroom Pasta with Goat Cheese

Mushroom Pasta with Goat Cheese is a different and eloquent pasta dish for two. There’s also leftover white wine in this recipe for you and your loved one to share.

Ingredients

  • 1 lb. farfalle pasta
  • 2 Tbsp. butter
  • 2 (12 oz.) cartons sliced mushrooms
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup heavy whipping cream
  • 1 tsp. salt
  • 1 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 6 oz. goat cheese
  • 2 cups chopped spinach

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat butter in a large skillet over medium-high heat. Add mushrooms and sauté until golden brown and soft, about 5 to 10 minutes. Stir in garlic, white wine, whipping cream and salt.
  3. In a large pot, toss pasta and mushroom sauce together. Add broth, as needed. Stir in cheeses and spinach.
